So another update. I’ve had some ups and downs. Life has been emotional and I’m getting better. Hopefully I am about 2 weeks out from going back on fertility meds again. I am already on one again- metformin. The one that causes me to be on a low carb diet. So yes back to low carbs and low sugar again. Le sigh what we do for a baby.
So you will hopefully see more activity here and more new recipes, probably low carb things for now.
It has been awhile since I have made an update here and done some new recipes. A few things have happened since my last entry. #1 I was in rehearsal for a show that required me to be at the theater 5-6 days a week. It was fun but that is now over #2 On vacation in the Bahamas #3 A recent medical issue was discovered and now I am on a low carb diet. The condition is nothing serious and hopefully the condition is really only temporary. So it was been very very difficult to combine no meat, no dairy and low carbs. I’ve found a few recipes that fit but it has been hard and somewhat challenging. Also I’m on a medication that makes me nausea and not even hungry. I hope very soon I over come this all and can enjoy some carbs again. I do cheat occasionally, but I also have been eating more dairy too.
I will keep you posted on everything.
Since wedding planning and a new home just isn’t enough I decided to add studying into the mix. I got a promotion and work and it requires two additional licenses. So for the next two months I will be back to studying, I’m not happy about it but it has to be done. I am really excited about the new job though. So my recipes for the next few weeks are going to focus on being really easy, and healthy. I want to avoid convenience meals which are mostly unhealthy and full of preservatives. I did stock up at Trader Joe’s yesterday. I love that place. I wish I could live there!

It’s been awhile since I did a generic update. There has been a lot going on including some theater, some home remodeling and some wedding planning.
I’ve been sticking to cooking as much as possible. I’ve been making dinners each night and making soups and cold salads for lunches. I am trying to keep up with that as much as possible. I’ve come up with a lot of good cheap recipes for lunches. Luckily I’m one of those people who can eat the same thing for lunch 5 days in a row as long as it’s good. I made a white bean and tomato cold salad. I also made some orzo vegetable soup. I’m going to try to make a cold pasta salad this up coming week. I also want to try to make some of my own seiten. I have an easy recipe for that too.
My new favorite thing to do is use our new grill. I’ve also cooked steak for the first time for Chris. I’ve cooked corn on the cob, some veggies, and some veggie hot dogs and burgers. Everything tastes better on the grill. One of the many great things about the summer.That is all I have to update you on for now. Hopefully some more new and good recipes will be coming your way. Any suggestions or recipe ideas please let me know. 🙂
So Happy New Year! I hope everyone who reads this had a great holiday and start to the new year. One of my resolutions was to work out more and the other was to be better at meal planning. I also want to be able to cook more for Chris and try new meat dish recipes.
I went to Trader Joe’s last week and it was great. I picked up some wine and some beer of course. I got some chicken and ground beef for Chris. I got some pita chips, soy cheese, cubed butternut squash, vegetarian sausage, guacamole, veggie burritos, veggie nuggets and sliced and breaded eggplant. I haven’t used it yet but I am looking forward to trying the soy cheese. I hope it tastes good and gives me an alternative to real cheese.
I am curious if anyone who follows me or happens to stop has any tips or advice for meal planning. I tend to come up with ideas/plans over the weekend or even the week before and then shop accordingly. Or any advice when you have to cook two separate meals due to different diets and likes/dislikes.
So I feel like I’ve been in a bit of a food slump lately. I think some of it is being lazy too. What do you do when you have food slumps or get lazy with cooking? I usually just buy a bunch of vegetable and find different ways to cook them. Sometimes I go to different food store Whole Foods, Trader Joe’s. I think a shopping trip to some place new will help a lot.
I also need to get over my fear of cooking chicken, I have yet to cook any chicken for my boyfriend. That will be one of my new year’s resolutions. I did make for him Cilantro Lime Shrimp, based on a recipe from skinny taste, and he said he liked it. I plan to make a meatloaf for him tomorrow, or sometime this week.
I occasionally cheat and have dairy but I usually feel the effects. It mostly occurs when I am out. I rarely will go out and buy dairy stuff. I still haven’t found any good cheese substitute.
I do find meal planning is very helpful and makes me think in advance about what to buy and when to make it.
So I survived Hurricane Sandy with very little damage. I feel pretty lucky considering some of the devastation out there in NJ. We lost power for a few hours but had no internet/tv for about 2 days. We finally got internet and all back today.
I’ve been lazy and my cooking this week has been less than par, not going to lie. When I feel like this it is usually an indication I need to get to trader joe’s. So last night I did attempt a new recipe. It was a sauce to cook some tofu in. May be it was how I made it but it was just God awful. Not even worth a repost of the recipe. Sorry guys. Trying to come up with some good for next week though!
So a lot of new things have been going on in the cooking world. I have to admit the eggplant risotto from last week was rather blah. I probably won’t make it again, but I would definitely try to make another risotto. Sometimes I am cooking two separate meals, sometimes Chris cooks on his own. I actually enjoyed cooking shrimp last week, it was so quick and easy. I enjoy trying to find meat recipes on line now. Sadly I do use gloves I bought to handle any kind of meat. Cooking chopped ground beef for taco is also pretty easy. I plan to try some pasta bolognese next week. Tomorrow I plan to make a mini meat loaf for him. I’m a bit afraid to try chicken still, although I may try something next week.
I need to make a run soon to Trader Joe’s it’s been awhile since I’ve been there and I love their stuff. Last weekend we went out to dinner at a nice restaurant and I had this amazing meal. It was an acorn squash stuff with stuffing and some dried fruit, with a side of green beans. I am going to try to replicate this recipe next week. I love the acorn squash.
Those are all of the updates for now. Suggestions over the next day or two on what to do with the leftover pumpkin would make me really happy too!
So I made tacos tonight, pretty simple no recipe or any detailed explanation but it included a lost of firsts.
I made my tacos with TVP, and I found an online recipe for taco seasoning a little too spicy but it was pretty easy. I also used lactose free cheese. It was so, the consistency was a bit different from what I’m used to, or may be I would have preferred the cheese to shredded thinner. It already came shredded.
The next adventure was cooking ground beef for Chris. It was actually pretty easy. I added taco seasoning once the meat was cooked. It did smell pretty gross. It came out pretty well, and so far Chris has had no adverse side affects 😉
I’ve been feeling rather lazy this week, so my dinners have been pretty basic. I did still make a new recipe this week. I need to make more yogurt too.
An update on some of the foods I made. I really enjoyed the white bean zucchini salad I made last week. All of the cold salads I’ve made this summer were super good and real easy. The Broccoli and Apple soup I made the week before I haven’t really enjoyed as much as I hoped. It tastes good, but I feel like it’s not filling enough and every time I eat it I want carbs with it, like a big pile of french fries, or a nice big piece of a baguette.
I enjoyed the eggplant and portabella mushroom fries, I just hate have to bread things, but they were good. I think the next time I make that I will only make one or the other, that was too much breading. I want to make some mushroom gravy at some point. I also want to make another pad thai soon. I love just buying a random vegetable and seeing how many different way I can cook it.
I want to make some peanut butter soon. I also have found a few great new recipes I want to try. My latest troubles are with the lactose intolerance. I can’t seem to eat dairy without issues, even when taking my lactaid pills. I love ice cream and lately I’ve been craving macaroni and cheese. Sigh. I will keep you posted. If anyone has some favorite vegetarian recipes let me know.
